If you love pickled things and garlic/onion mutants. This one is for you. You can also have fun with your pickling liquid. I left you with a blank canvas but here are a few add-in ideas.

Mustard Seed
Celery Seed
Peppercorns
Thyme
Tarragon

Ingredients
- 1/2 cup thinly sliced shallot rings
- 1/2 cup Red Wine Vinegar
- 1/4 cup Water
- 2 tsp. Granulated Sugar
- 2 tbsp Kosher Salt
Instructions
- Combine vinegar, water, sugar and salt in a jar with a tight fitting lid. Shake well.
- Add shallots and shake well
- Pop in the fridge for 30 minutes
- Wonder why "fridge" has a d and refrigerator doesn't
- Drain
